I love making ice cream when I've nothing better to do LOL
A good basic vanilla recipe is great because you can add your favourite things to it. My Italian recipe book features a delicious variation with nibbed almonds and chopped Maraschino cherries - plus juice - stirred through during the freezing process. Y-U-M-M-Y!
Don't ask me what I think of you, I might not give the answer that you want me to.
Well, I had to find something to do with my Kitchen Aid lol! It's the first time I've felt like using it since Christmas. Now I realise how quick it is to make meringue, I could be on a roll.
The best bit is the ice cream needs no further attention once it's in the freezer.
I have resolved to get my little ice cream maker out this year and make frozen yogurt. I have made traditional vanilla ice cream, and it was lovely, but too many calories.
I would only normally make this when people were coming, even divided into portions it's too much fat to be eating regularly. I'm going to try it with half-fat cream and I think I'll try it with zero fat Greek yoghurt as well. The problem is I also worry about the gloop they replace the fat with!
The nearest thing I've made to icecream is when I put frozen fruit and yoghurt into my Ninja ....... it's delicious and fortunately in small amounts because if I ever have a tub of icecream in the freezer (which isn't very often) it doesn't last very long and isn't as healthy as the fruit/yoghurt version. (She says hopefully.)
I daren't make the version in Y's post because I'd be making it (and eating it) 24/7.
I've posted this before elsewhere, but this is good . . .
BANANA ICE CREAM
4 ripe bananas, peeled, cut into chunks and frozen in a freezer bag or on a tray ¼ tsp vanilla essence 3-4 tbsp caster sugar - see comments 200ml/5floz buttermilk - see comments
Remove the frozen bananas from the freezer and leave to defrost slightly for a few minutes.
Blend the frozen bananas, vanilla, sugar and half of the buttermilk in a food processor until smooth.
While the motor is running, slowly add the remaining buttermilk and continue to blend until smooth and creamy.
SUGAR - depending on the bananas I find 1 tbsp enough - I use Half Spoon
BUTTERMILK - the carton is about 187ml or thereabouts - I add a little milk to make up to 200ml
