The BEST mince pies I've ever had come from Costco, they have a pastry base, really tangy mincemeat and a thin top layer of sponge, scrumdiddlyumptious.
I use Robert Carrier's recipe when I can be bothered to make them, basically substitute the pastry for scone dough top and bottom, make them on a baking sheet and cut them in squares when cooked.
I've given up on mince pies. After the first one, I've usually had enough. I do buy the mini ones and Baby Tink likes those. They're enough for me really. I much prefer stollen or Christmas cake.
