Yes, I know it's a Christmas thing but to be honest I would happily eat stollen all year round. Unfortunately, I have never found a gluten free stollen and, while I love baking, I'm not keen on making gluten free bread type bakes.
However, problem now solved. One of the things that I bake a lot of is muffins. They are quick and simple, work fine in GF form and freeze really well. A quick defrost in the microwave and they are good to go. I have made lots of different flavours, all of which have worked well, but my latest is the best so far - Stollen muffins, complete with a layer of marzipan and topped with a thick sprinkle of icing sugar. Oh my, they are gorgeous. As soon as this batch is eaten I will be making more.
For any bakers out there.....I have a basic muffin recipe which I converted to GF and then I tweak it to suit. This had mixed fruit soaked in orange squash and rum essence (fruit juice and real rum being in short supply!) and a mix of chopped almonds and walnuts added. I used the soaking liquid instead of milk and I always substitute oats for a couple of ounces of flour in my muffins (gives them more texture). I filled up the muffin cases, tucked in a disc of marzipan about halfway down the batter and sprinkled a few little cubes of marzipan on top. When they were baked I sprinkled thickly with the icing sugar (but I leave that till defrosted if I'm freezing them). Very, very yummy.
