It was also pretty basic - pound the cheese until it is smooth and pasty - mix the pounded cheese in a brass pan with honey and spring wheat flour - heat the cheese cake “in one mass” - allow to cool then serve.

Yum.
....but...but, Mr. M ...." ees Greek " therefore will be delicious...
They take this to impossible heights. It goes without saying that, to them, everything Greek is superior but it is even better/tastier/ more covetable if it comes from one's own village, or, at the very least, the Island your ancestors hail from. Hence we have firewood sellers who boast that their firewood is " απο την Κρητη" (from Crete). Now, potatoes from Naxos are definitely the best Greece has to offer, they have the ideal soil for them there but why the heck is Cretan firewood superior?? it sells well though, presumably to Cretans and there are many such examples.
It's a great pity the right of free speech isn't based on the obligation to say something sensible.
And if I have done the heading wrong, my apologies. I just wanted to celebrate a non-alcoholic day and Yorkshire is my second home ( for obvious reasons )
