Re- recent conversation about Mixed Baked Beans in Tomato Sauce . . .
In a little oil, I cooked a sliced red pepper, some chopped onion and chilli flakes until softened, added a few sliced mushrooms and diced leftover carrots. Stirred in a tin of mixed baked beans and divided between 3 small dishes as just for me.
Added chunks of cooked sausages and topped with some crushed leftover new potatoes. Reheated one for tonight in the microwave for a few minutes, sprinkled with a little grated cheese and popped under the grill to brown.
It was delicious! The beans are lovely, and I will buy them regularly now, will make a change to have on toast and I think they would good with some white fish chunks too.

No idea what we had tonight, but it was rigatoni pasta in a red wine sauce with sausages, onions, chopped tomatos, and I think a veggie stock cube was lobbed in. There may have been other secret ingredients. Oh cheesy top of course. Bloody lovely it was.
I still haven’t bothered to buy any more salad stuff because dull weather doesn’t automatically make me think of lettuce leaves etc., so tonight it’s chilli con carne with rice.
I'm having a cook up today, will be nice to have the oven on, brrrr!
Roasted carrots, peppers, onions and butternut squash, some for soup and some for eating.
Plus a tray of sliced and roasted peppers, onions, courgette, aubergine, half for adding to sandwiches, the rest gets used to make a minced beef pasta sauce some of which I shall have tonight.
I was naughty this week and bought some ice cream, so I'm cooking a bag of frozen blueberries with a little sugar to make them syrupy so they will keep a while in the fridge. Must be healthy to have fruit with ice cream.
