Home made shepherd's pie filling. For a change - mixed with loads of veg, topped with crushed new potatoes, sprinkled with rosemary, black pepper and sprayed with a little oil. In the oven now getting crispy, smells good!
I never cooker a meal for one MrM, always bulk cook specially if I'm using the oven. I do at least 2 different meals in the oven, each enough for 4-6 people. I don't mind eating the same meal for two days running, it saves a lot of money, lots of microwave dinners, not to mention nights off apart from cooking veg.
I do same Frazz except that I make at least a dozen portions of everything ,to freeze. Sam comes home at all sorts of odd hours as customers often want him to do more or they are not home until evening so he just needs to pop a meal in the microwave when he gets in. Also, electricity is so expensive here so I only turn the oven on for batch cooking and baking.
It's a great pity the right of free speech isn't based on the obligation to say something sensible.
I think a great many people will be realising the benefits of batch cooking this year, as long as they have a freezer.
One of the best tips I learned was with things like bolognese, chilli etc, is to pack in freezer bags spread to 3-4cm deep, so you can stack them flat in the freezer. Mashed potatoe freezes well, I usually cook a 2k bag.
