Once you decide what you want to eat you just need to keep within the boundaries (not overbearingly strictly). I rarely feel hungry at all these days and have no craving for carb products at all
Yes its tricky at first and a bit hit and miss but after 3 weeks now Im well into it and feel great, if anyone is interested I can go into it a bit deeper as I know you can read about it on line but sometimes they make it sound more complicated than it is
We just eat as near to zero carb as we can, works just as well - boundless energy, no need to snack etc. It is second nature to us now, after years of it, and so uncomplicated. If we are invited to someone's house, we don't fuss and eat what we are given, same if we are eating out with others, we try to avoid sugar and carbs but indulge occasionally. However, we always feel hungover afterwards. If it was a good meal, it is worth it. Sam takes for his lunch every day, Home-made beef jerky, polish sausage, cheese and chilli mix wrapped in ham, a plain hard-boiled egg and a bacon-wrapped egg and a few spiced nuts.

When I first found I had a gluten issue I didn't really know what to eat in the way of grains so gave up all grains plus other things and went paleo. It may have been because I couldn't afford to do it properly but I didn't feel any better and didn't lose any weight. After about a year I gave up and just did lots of research on grains etc. I now have about 10 types of flour that I use in baking and so on and live on corn tortillas instead of bread most of the time!
I am allergic to corn in all it's various disguises - and they are many. I could never take any tablets which were loose in a bottle as they used to dust them with corn starch to stop them sticking together. They do the same to frozen prawns and it is in most cough medicines. Fortunately, I now have a homeopathic remedy that minimises the effects if I accidentally ingest a little so havn't been hospitalised for several years now, but it used to be scary.

That must have been really difficult, Cass. Especially back when nothing had ingredients listed. There are a few things that have wheat flour that you wouldn't expect but I can tolerate a small amount from time to time so it isn't such a problem.
