This topping can enhance any thick, ¾” to 1”, fish fillet. I frequently use it on cod. The original came from “Allrecipes.com” but I have added to it.
Ingredients
A fillet of halibut about 1” thick
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1/2 cup sour cream
2 Tblsps. Flour
1 tsp. dry dill weed
Zest and juice of 1 lemon
1 Tbls. or scraped onion
5 dashes red Tabasco
paprika
Preheat oven to 350 to 400 degrees. Lightly grease a medium baking pan.
In a bowl, mix all ingredients except fish and paprika.
In baking pan, arrange fish fillet(s) and pile the cheese mixture on top thickly.
Sprinkle with paprika.
Bake for 10 minutes in preheated oven. Reduce heat to 350 degrees and continue baking for another 10 minutes. Test to see if fish flakes easily when poked with a fork. If not, bake another 5 minutes. (I find most fish cooks in about 18 minutes.)
