I make lots of muffins - they work well gluten free, freeze really nicely and work for breakfast, elevenses or desserts. I like to make lots of different flavours. I don't very often make chocolate ones - I like those as a dessert but not so much for breakfast. I also add oats in place of some of the flour as it makes it a bit more substantial.
I have mentioned my stollen ones in another thread but I have made bluberry (obv), spiced apple, banana teabread, pear and ginger, gingerbread to name but a few. Then there is this morning's creation - peanut butter and jam!! Very tasty, if I do say so myself.
Any other suggestions? I'm thinking rhubarb and ginger might work. I have made Lady Grey teabread ones (a citrusy tea) and I'm thinking Earl Grey would work too. What else d'ya fancy?
Ooh, plum and almond sounds good. Cherry and almond (a bit like a cherry bakewell!) would work too.
I shall have to get today's in the freezer sharpish or I will eat far more than is good for me!! The jam was dolloped on just before baking so there is a puddle of raspberry seedless in the middle of the muffins. *drools*
Lemon and chocolate chip? That's unusual. I've done lemon and poppyseed - a dollop of lemon curd in those would be nice. My spiced apple ones have a sort of streusel topping but I've not tried it on blueberry. *adds all of the above to list*
Mr EB came home from Tesco yesterday with several boxes of reduced baked goodies but I can't eat them. Making my own stuff is about the only way I ever get baked treats so I'm always looking for something new to try.
