I have acquired a new herb bed. It will be about three metres by four metres so its a big space. Its about three times the size of my existing her bed.
So what would you grow? You don't need to be a gardener, just chip in with the herbs you love and use.
I'm looking forward to growing more varieties of herbs and put them all in the one place. I have borage, sage and fennel ALL over the place.
I think the existing herb bed will be turned over purely to mint to fuel my mint tea addiction.
I have some mint but have confined it to a planter so it doesn't take over the world! I had some years ago in a trough on the wall at the end of the garden and it actually spread into the wall - took years to get rid of it!
I only have a small herb 'garden' (ie a small planter) and have mint, thyme and parsley. I have a large rosemary bush elsewhere in the garden and purple sage in a couple of flower planters for the colour. (I have also grown a couple of pots of Corsican Mint since you mentioned it!) I usually chuck a few basil seeds in a pot each spring too!
One herb that I used to grow, and used quite a lot, was Tarragon - French or Russian, can't remember - but I haven't had that for ages. I used to make tarragon mayonnaise for chicken salads. Maybe I will get some more.
My garden could do with a bit of an overhaul (if I can manage it!) so maybe I will start with the herbs!
I'm having a bit of a wobble now as its a seriously big space. I need to have some kind of plan I think.
Oh I love Corsican mint. Have you been able to keep it in the pot? I find it all over the garden. Quite how it manages to travel so far I don't know.
I know mint generally has a bad press but actually in the open ground in amongst other herbs it isn't as thuggish. You have to surround it with equally thuggish mates though. Sage, bergamot and marjoram give as good as they get.
Tinkerbelle - you could divide your LARGE plot into quarters, put in some brick/gravel little paths with a tub where all the paths meet. It might not seem so daunting ... then again h0129

So far yes - but I've not had it that long! I had 6 plants, 3 of which went into pots, the other 3 I put in the ground, near steps and paving stones. It has been a bit soggy, which they don't like, so the ones in the ground haven't done so well. Hopefully, come the spring............
The ones in pots are in areas where they should stay in the pot - one on a gravel patio, one on a little side table by my rattan sofa and one on the main table. If they do well I can split one up to replace the ground ones maybe!
Dividing up your herb bed sounds like a good idea, as does maybe drawing up a plan. There are so many herbs around that I can't see you having a problem filling it! Good luck!
I've never been able to grow Cosican mint in the ground where I want it. Where IT wants to grow is a different matter. And how it manages to spring up several feet from where I planted it given the fact its a wee plant with tiny flowers I will never understand.
